to send off the final days of cold weather, my mother put together a family favorite, passed down from generations and probably the easiest recipe, like ever. this simple meals consists of sauteed onions, canned peas and either ditalini pasta or medium shells, giving it its very fitting name, pasta and peas. never have we known this dish by anything else, so the straightforward moniker will remain as it has for what i assume to be hundreds of years.
my favorite way to enjoy this dish is with a sprinkle of grated parmesan and a chunk of crusty bread to soak up the amazing broth generated by the olive oil from cooking the onions and the liquid that the canned peas comes packed in.
